Knife’s Bacon Jam

Serves 4


  • 6 pounds diced bacon
  • 1 1/2 cups reserved bacon fat
  • 5 pounds yellow onion
  • 1 1/2 cups brown sugar
  • 3/4 cup minced garlic
  • 3 teaspoons cayenne pepper
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground nutmeg
  • 3 cups whiskey
  • 1 1/2 cups sherry vinegar
  • 1 1/2 cups maple syrup
  • 2 cups ketchup


Render bacon on medium high heat and reserve fat. Add sliced onions into pot with bacon and reserved fat. Sweat onions until soft. Add brown sugar and continue cooking until onions caramelize. Add cinnamon, nutmeg, cayenne and garlic to pot and continue cooking for five minutes. Add sherry, whiskey and maple syrup then cook until all alcohol is burned off stirring to make sure there is not scorching. Remove from heat and pulse to consistency in a food processor. Spoon mixture onto buns.
