Recent Breakthrough in Appetite Control

Remove the fat, sugar and salt from food and you instantly make it healthy. It also instantly makes it a flavorless meal no one wants to eat.

Luckily, scientists have found a way to trick our brains into thinking dessert and other foods contain more fat, sugar and salt than they do through the use of natural aromatic molecules. Researchers at the Centre des Sciences du Goût et de l’Alimentation in France created a first-of-its-kind device called a gas chromatograph-olfactometry associated taste (GC-OAT).

When used in conjunction with an olfactoscan, which delivers a continuous stream of aromas through a tube to a subject’s nose, the scientists can identify pleasing aromatic compounds—a process they believe can help manufacturers reformulate bland food to appeal to the taste buds of health-conscious consumers.
